Potato Salad—Jenn
6 med potatoes, peeled, cubed, cooked, and cooled
3 eggs, hard-boiled, cooled, coarsely chopped
½ bunch green onions, finely chopped
2 pickles, coarsely chopped
1 t mustard
Mayo
Salt and pepper
Sugar
Combine first 4 ingredients, add enough mayo to just cover. Mix in about 1 t. mustard, more if desired. Add salt and pepper to taste and a pinch of sugar. You can chill if needed or serve immediately.
